What you need

  • 400g chicken breast or thigh, sliced thin
  • 1 large head broccoli, cut into florets
  • 2 cups long-grain rice
  • 6–8 garlic cloves, minced
  • 3 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • Vegetable oil · white pepper · chicken stock (optional)

Quick method

  1. 1Toss sliced chicken with soy sauce, cornstarch, white pepper, and sesame oil. Marinate 10 mins.
  2. 2Cook rice in chicken stock (or water). Finish with a drop of sesame oil.
  3. 3Get pan very hot. Fry garlic 30 secs, add chicken in a single layer — don't touch for 90 secs.
  4. 4Add broccoli. Mix soy sauce, oyster sauce, and a splash of water. Pour in and toss on high heat for 3–4 mins.

Garlic Chicken & Broccoli Rice: Faster Than Delivery, Better Than You Expected

This is the meal that convinced me I did not need to order on weeknights. Five ingredients, one pan, thirty minutes. The garlic is not subtle — that is the point.

The version that most people make goes wrong in one place: they add the broccoli too early and it turns grey. Keep it in the pan for no more than four minutes and pull it while it still has some bite. The colour and the crunch are half the meal.

🥦 The Method

Step 1: Prep the chicken

Slice 400g chicken breast or thigh into thin strips against the grain. Toss with soy sauce, a teaspoon of cornstarch, white pepper, and a tiny splash of sesame oil. Leave it for 10 minutes while you do everything else — the cornstarch is what gives you that glossy restaurant finish.

Step 2: The rice

Cook your rice as normal, but swap half the water for chicken stock. Finish with a drop of sesame oil and a pinch of salt when it comes off the heat. Day-old rice works even better here — if you have it, use it.

Step 3: Get the pan very hot

High heat is non-negotiable in a stir-fry. Add vegetable oil to your pan and wait until it shimmers. Add 6–8 minced garlic cloves and cook for 30 seconds — no longer. Then add the chicken in a single layer and do not touch it for 90 seconds. Let it sear, not steam.

Step 4: Broccoli in, sauce in

Once the chicken is mostly cooked, add the broccoli florets and 2 tablespoons of soy sauce mixed with a teaspoon of oyster sauce and a splash of water. Toss everything together on high heat for 3–4 minutes. The sauce will reduce and cling to the chicken and broccoli. Serve immediately over the rice.
